Crock Pot Pepper soup is a tasty, healthy fall soup flavored with zesty fresh peppers of your choice. An easy throw together crock pot (or instant pot) meal for busy days. Add a pan of Mexican cornbread for a delicious, lively dinner full of good nutrition!
Dave harvested all the outdoor garden peppers. Pepper soup is a favorite recipe to use some of our fresh pepper beautifuls. Lately fast and easy meals, are what’s on the menu.
Harvest time means I’m doing a lot of kitchen work that’s not feeding the family…. yet! I’m in the kitchen all day creating ways to use up our harvest. Lovely peppers and tomatoes, apples and a HUGE load of butternut squash.

Fortunately the squash will keep. But not so the fresh tomatoes and peppers. And carrots! Dave planted a TON of carrots this year and they all grew fabulously. I made a lovely carrot cake last weekend with a few of them.
Dave’s Fresh garden tomatoes and Tiburon and Bangkok peppers are full of flavor. Perfect additions to pepper soup.
NOTE: The type of peppers you choose for this recipe will make a difference in the finished flavor.
We enjoy our roasting peppers(similar to Pasillas). They have a bit of zest and are not a sweet pepper like a bell. For a TRULY zippy soup, add one hot pepper like a bangkok or jalapeno.

This soup is often made with sweet peppers and you may choose to do that. The sweet peppers may change the way this recipe tastes so be sure to adjust the soup seasonings for your sweeter peppers (maybe more Italian?) if you go that route.
One thing about this recipe…I did use a box in it. I have made this soup for many years without a box grain mix. BUT…
This time I had a box of Zatarain Rice Pilaf in my pantry and it went into this soup. (cold season you know. I got Hammered with a doozy and any time savers looked good to me).
The mix was good! This is NOT a sponsored post for Zatarain but I did use that brand. It’s an old favorite of ours.
That makes this soup so easy you don’t even have to measure out the grains. Just open the box and pour.
HOWEVER, To Avoid using a Box:
Add 1/2 Cup of each orzo and white rice if you want to go all on your own. Season the soup with some extra garlic and you are all set.

Crock Pot Pepper Soup With Rice and Orzo
An easy, tasty fall dinner. Zesty peppers flavor this excellent slow simmered soup.
Ingredients
- 1 lb. hamburger, browned
- 4 cloves garlic, finely chopped
- 1 medium onion
- 2 15 oz. cans stewed tomatoes, or diced
- 1 15 oz. can tomato sauce
- 4 Cups water
- 4 medium Roasting peppers , or whatever pepper heat you prefer
- 4 medium fresh tomatoes
- 1 box Zatarains
Instructions
CROCK POT INSTRUCTIONS:
- Saute the hamburger, onions and garlic together on saute function until meat is thoroughly cooked.
- Meanwhile chop up your fresh peppers and tomatoes.
- Pour in the canned stewed tomatoes and tomato sauce to the instant pot.
- Add the water
- Add the peppers and tomatoes and [easyazon_link identifier="B00IB24QRC" locale="US" tag="homefoodjunk-20"]Zatarain's rice Pilaf[/easyazon_link]and seasoning packet.
- Set your crockpot on high for four hours or on low for eight hours
INSTANT POT INSTRUCTIONS USING THE SOUP FUNCTION:
- This is the fast way to make soup in your instant pot if you don't want to cook it all day.
- This soup makes an incredibly easy weeknight one pot dinner in an instant pot!
- Saute the hamburger, onions and garlic together on saute function until meat is thoroughly cooked.
- Meanwhile chop up your fresh peppers and tomatoes.
- Pour in the canned stewed tomatoes and tomato sauce to the instant pot.
- Add the water
- Add the peppers and tomatoes and [easyazon_link identifier="B00IB24QRC" locale="US" tag="homefoodjunk-20"]Zatarain's rice Pilaf[/easyazon_link]and seasoning packet.
- Press the off/cancel button on your instant pot. Now Press the soup function and seal the instant pot lid.
- When the pot beeps to let you know it is done, press the off button.
- Quick release until the valve depresses.
IF YOU WISH TO USE THE INSTANT POT AS A SLOW COOKER:
- Proceed with the instant pot instructions above. EXCEPT Instead of using the soup function press the slow cook function key after the saute is done. Set the instant pot for 4 hours on high heat (or eight hours on low heat).
Enjoy your soup. This soup is especially good with homemade French bread.
Notes
I am using a box of Zatarain Rice Pilaf for convenience and the seasoning flavors work well together in this soup.
Feel free to substitute whatever rice /orzo mix you prefer for this recipe. Plain grains will work in this soup too. Just season the soup to taste with more onion and garlic as you desire.
At serving Garnish with fresh Cilantro or parsley as you prefer.

Hi Melanie, Thank you so much for pointing out the error in this recipe. It really is a great fall soup. In addition to the can of tomatoes, you could also cut up a fresh tomato or two if you have them handy. I actually used some fresh from our greenhouse, in this one.
