This Crustless Spinach Quiche is made with Greek yogurt, bacon, peppers and onions. This is a simple quiche to put together. You can have it to the table in under an hour with very little work.
Crustless spinach quiche makes a tasty, high protein meal. This is a nutritionally complete dish with plenty of flavor and staying power. All the protein rich ingredients satisfy and sustain you for hours.

It also holds well in the fridge for up to a week. This spinach quiche makes good leftovers. Reheat it in your microwave, a serving at a time, to keep it freshest and evenly reheated.

Crustless Spinach Quiche Recipe:
Substitutions:
If you are an ovo vegetarian feel free to omit the bacon. This will also significantly reduce the sodium, some protein and fats.
- You can also replace the bacon with a leaner meat like low fat ham. Or you could choose to make our crustless sausage quiche with low fat chicken sausage. It’s also a nutritious crustless quiche.
- Fresh Swiss chard or kale can replace the spinach in this quiche.
- Use whatever heat or style of pepper you enjoy in this recipe. My favorites are the slightly hot peppers like poblanos. They have a good flavor when paired with bacon and egg dishes.
- Heavy cream can replace the milk for a richer quiche. But it is really unnecessary.
- Adjust the spices to your taste preferences. The ones I use work really well in this recipe but if you have favorites give them a try.
There are only a few simple steps to preparing this quiche to bake.
- Sauté the bacon and prepared veggies
- Mix with the remains ingredients.
- Pour it in an oiled pie plate and bake until done.
Crustless Spinach Quiche Recipe
A low Carb, Gluten free Crustless spinach quiche with bacon,Greek yogurt, peppers and onions. This crustless quiche is full of flavor and nutrition.
Ingredients
- 2 Cups chopped spinach
- 1/2 Lb. diced bacon
- 7 eggs
- 1 Cup low fat milk
- 1 Cup nonfat Greek yogurt
- 1 1/2 Cup shredded Cheese-(cheddar, pepper jack, Havarti or smoked gouda will all work)
- 1/2 Cup finely diced fresh pepper of your choice
- 1/2 Cup diced onion
- 2 cloves garlic minced
- Recommended spices Thyme,. Italian seasonings,
Instructions
Prep:
- Preheat oven to 350 degrees
- Chop bacon into one inch pieces.
- Chop vegetables fine.
In a large skillet:
- Sauté bacon on medium heat for five minutes stirring occasionally.
- Add peppers, onions and garlic to the bacon. Cook until the onion is translucent.
- Meanwhile Grease a nine inch pie plate. Set aside.
In a large bowl:
- Mix together the eggs, milk, yogurt and spices.
- Whisk until slightly frothy.
- Add Cheese and whisk until combinedl
In a large bowl:
- Stir the spinach in with the other quiche ingredients.
- Pour into your greased pie plate
Baking Instructions:
- Bake 45 minutes in the middle of your oven.
- The quiche is done when a knife inserted into the center comes out clean.
- Serve.
Notes
Reheating Instructions:
This quiche recipe makes great leftovers. Reheat it in your microwave one serving at a time on a microwave safe plate until evenly heated through.
OR Oven Reheat it at 350 degrees F. For 10 to 15 minutes for a large amount of the quiche.
