Goat Cheese Appetizer with Cranberries and Pistachios

This easy goat cheese appetizer is perfect to put together for a party or small gathering.

Ingredients

  • 1-10 oz. goat cheese log (we used Costco brand)
  • 1/2 cup chopped or crushed pistachios
  • 1/2 cup dried cranberries (diced fine)
  • 4 Tablespoons pepper jelly
  • 2 Tablespoons honey (hot honey for a bit of spice)

Instructions

    1. Chop or crush the pistaschios and dried cranberries into small pieces as desired. Use a sharp chopping knife or a food processor.
    2. Spread the chopped nuts and cranberries evenly and densely onto a board.
    3. Remove the goat cheese log from the refrigerator and it's wrappings.
    4. Roll the cheese log in the chopped nuts and cranberries until the cheese log is evenly coated.
    5. Place the nut and berry encrusted goat cheese onto your serving tray.
    6. Spread the pepper jelly over the log with a spoon or force it through a pastry bag (You can also place the jam into a sandwich bag with a teeny hole cut in a corner).
    7. Drizzle the hot honey over the jam.
    8. Serve with crackers. (we use La Panzanella crackers)
