To fill your scones simply make the dough and divide it into two equal parts. Lay half of the dough down onto your baking sheet, spread a generous amount of jam over it and lay the other half of dough on top. Bake in the oven and finish with a glaze if desired.

Custard filled scones are another delicious way to enjoy this pastry. Simply whip up a custard with eggs, sugar, lemon juice, whipping cream, and vanilla; prepare the scone dough and divide equally. Fill the middle of the dough with the custard, bake and cool. The scones can be served with jams, jellies, and fresh whipped cream.

Our homemade baking mix keeps this recipe healthy with minimal additives, preservatives and low quality fillers that are often found in store bought brands.

Scones can be stored for a few days at room temperature when properly covered using an airtight bag or container. They can also be frozen and stored for up to 3 months. If freezing we recommend waiting to add a glaze until you are ready to eat them. When you are ready to enjoy the scones remove from the freezer and warm in the oven.

Quick N Easy Jam Scones are made with my homemade Coconut oil Baking mix. Have these  tasty scones baked and ready to eat in 30 minutes!

Ingredients

  • 2 Cups baking mix (use homemade mix)
  • 1/3 Cup sugar
  • 1/3 Cup melted coconut oil
  • 2/3 Cup full fat yogurt
  • 1/2 Cup montmorency cherries-chopped small
  • 3 Tsp. marmalade or other citrus/peach based jam
  • (For the Glaze)
  • 1/2 Cup powdered sugar
  • 1/2 Tsp. vanilla extract
  • 1/4 Cup milk

Instructions

  1. Preheat oven to 350 degrees F
  2. Oil a large baking sheet or place a silpat mat on it
  3. Measure all the dry ingredients into a large bowl
  4. Whisk to blend the dry ingredients
  5. Add the chopped cherries, yogurt and coconut oil and stir together with a wooden spoon
  6. Oil your hands a bit
  7. Place the scone dough on the baking sheet
  8. Press the dough out into a circle shape (or rectangle) so it''s an even thickness
  9. Bake 20 minutes. Remove from oven and cut the almost done scones into desired scone shapes
  10. Return to the oven about 5 minutes to crisp the edges of the scones. They are done when a slight golden brown color begins around the crust edge
  11. Once the scones are cooled, whisk together the glaze ingredients
  12. Put the glaze into a sandwich bag with a tiny hole in it. Now drizzle it over the scones as much as you prefer
  13. Serve immediately or store in an airtight container up to two days
