Adding Roasted Raspberries to the menu is an easy way to rev up the flavors. Fresh raspberries are a healthy, delicious treat anytime. Roast them and they reach a whole new level of intense berry flavor you are going to love.
Kayti and Brian offered us canes from their raspberry patch years ago. Wonderful red and golden berry canes. Dave made them a huge raised bed a year ago last spring. Now, Our garden raspberries are old enough to produce excellent raspberries in good number.
We are reaping the rewards of Dave’s monumental garden project (he worked on that bed in his spare time for weeks). Imagine us gorging on fresh raspberries hand over fist. I circle the bed and grab the easy fruit. Dave goes right into the middle of the bed and finds LOTS of raspberries in there nearly every day. This is an everbearing variety so we should keep getting new berries for the remaining growing season.
I need some new recipe ideas for these yummy berries. I have made raspberry sauce, raspberry squares, and raspberry mini tarts (those are awfully good). We have enjoyed these luscious berries in savory recipes. Raspberry Marinade For Chicken sure brightens up a boring ole hen and Crock pot Cranberry raspberry Chipotle Pork Roast has delicious flavor. We love all these ways to eat up our delicious harvest.
But I wanted more! Roasting any food correctly concentrates the flavors. I discovered roasting raspberries on the Food network. Ina Garten has a short post about roasting berries (linked below). I had to try it. Roasting raspberries is SO easy to do and produces a flavor no other saucing method can give you.
There are tons of ways to use them too. Pour roasted raspberries over yogurt for breakfast, cheesecake or angel food cake. Such a delicious summer treat.

Roasted Raspberries Recipe:
You won’t find an easier way to sauce up your berries and improve their flavor. Remember, there is no thickener in this recipe. So this a very loose juicy sauce. As you can see in the cheesecake picture roasted raspberries just stream over the side in a delicious mess.
If you want a thicker sauce after roasting follow the directions for my Homemade raspberry sauce. Just add the cornstarch and heat the berries to boiling. You should not need more liquid. That will thicken them up.
Instructions:
Preheat the oven to 400 degrees
Put the washed and dried berries into a shallow baking dish.
Toss in the cinnamon and maple syrup. Stir.
Bake 20 minutes.
Enjoy.

Roasted Raspberries Recipe
Roasting raspberries or any berry concentrates the natural sugars and adds intense flavor. This recipe is not a classic sauce but the berries are juicy and form a sauciness. So good as a topping for cheesecake, angel cake or ice cream.
Ingredients
- 4 Cups fresh raspberries
- 1 tsp. Cinnamon
- 2 Tablespoons maple syrup
Instructions
- Preheat oven to 400 degrees F
- Pour the washed and dried fresh berries into a shallow oven safe 2 quart baking dish.
- Toss with cinnamon and syrup.
- Roast 20 minutes
