Homemade Two Ingredient Bagels Recipe

This Two Ingredient Bagel recipe makes soft, chewy, fresh bagels in half the time of the traditional recipes. It’s a simple process that anyone can do, and doesn’t require boiling, a large array of ingredients or kitchen tools.

The honest bagel is loved by everyone. Traditionally it is a rich, chewy bread shaped into individual rounds with a hole in the middle; made with yeast, boiled, and then baked in a very hot oven. It is well loved for its convenient grab-and-go style, as well as it’s versatility in seasoning options and sweet or savory filling choices.

These two ingredient bagels are made with self rising flour, and creamy Greek yogurt for a simplified version of the classic style. In this post we give you all sorts of tips and tricks so that you can make authentically chewy bagels that you know you will love.

Who introduced bagels to the United States?

Bagels originated in Northern Europe with history in Germany, Poland and even Israel. Bagels were first introduced to the United States by Polish immigrants in the late 19th century. New York is where bagels made their mark in the U.S. which explains why they have become a well known and famous pastry in the big city.

Can you boil 2 ingredient bagels?

You can boil 2 ingredient bagels, but we do not find it necessary for a simple, basic bagel. Boiling is an option, and may give you more of that defining bagel crust, as well as a hearty, chewy texture.

We choose not to boil these bagels in order to keep the simplicity and ease of this recipe, and we aren’t disappointed in the resulting bagel crust or texture.

How many calories are in 2 ingredient bagels?

2 ingredient bagels are definitely an option if you are counting calories or tracking macros. Each bagel in our recipe is about 144 calories with 9 grams of protein and only 1 gram of fat! Adding toppings and fillings will change the macros of course, but for a simple, honest bagel they are a great option.

Whenever possible, try and use good quality ingredients like organic flours and Greek yogurt made from high quality milk with no additives.

Two Ingredient Bagels Recipe Tips and Ideas:

There is some freedom in how you make these 2 ingredient bagels. We have made this recipe with different flours and different toppings. Changing the flour will yield very different bagels so try a few a decide which you like best.

Can you freeze 2 ingredient bagels?

2 ingredient bagels do freeze well and will keep up to 6 months when stored in an airtight, freezer safe container. You can freeze them individually in freezer safe baggies, or all together. When you are ready to eat them set on your counter overnight and allow then to thaw at room temperature.

The next day place your bagel in a toaster oven to warm through. You can also preheat your oven to 400 degrees F. and place the bagels on a wire rack over a baking sheet. Drizzle 3 tablespoons of water over bagels and allow them to bake for 14-16 minutes.

The Ingredients:

The very easiest way to make this recipe is to buy a box of self rising flour and a tub of thick strained Greek Yogurt. Those are the two ingredients that make up this recipe.

You can use a stand mixer or mix this recipe by hand. Just add as much yogurt as you need to make a workable dough.

We have made this recipe with both the bread flour, as well as standard all purpose flour. You will see the results of both pictured in this post.

We topped them in the video with toasted sesame seeds. They were more authentically chewy as a bagel should be.

Using Bread Flour for these bagels:

Make these scrumptious 2 ingredient bagels with homemade self rising bread flour for chewiness.

  • Let the bagel dough rest for 30 minutes before forming the bagels to allow the proteins in the dough to relax.
  • Make your own self rising flour if you use bread flour.
  • The bread flour does make a stiffer dough. So be sure to let it rest at least a half hour if you go that route.

Tips For WW 2 Ingredient Bagels:

  • Use white whole wheat flour for lighter results and to help with the rise. Red whole wheat will give you a much denser (but still tasty) bagel.
  • You will need to make it into a self rising flour. (see instructions below and in the notes section of our printable recipe card).
  • Whole wheat flour (especially ww bread flour) will make this a very strong dense dough. Let it rest 30 to 60 minutes to relax the dough before forming.
  • You may have to knead the dough to get it to form correctly.

Homemade Self Rising Flour:

To make your own self rising flour for this recipe:

  1. Place 2 cups all purpose flour (or bread flour or WW flour) into a sifter.
  2. Add one Tablespoon of baking powder and 1/2 tsp. salt.
  3. Sift it together into a medium bowl.

Best Greek Yogurt for these bagels:

This recipe requires heavily strained Greek Yogurt NOT the Greek STYLE yogurt. There is a difference and it is important you use authentic Greek Yogurt.

I use the Kirkland brand when I’m not making my own. Stony Ridge. Chobani or Fage Real Greek yogurt will also give you great results.

Bagel Topping ideas for Two Ingredient Bagels:

Toppings are optional with this recipe. But they DO add their own flair.

For the egg wash:

Make an egg wash for shine on the baked bagel and to hold the toppings on:

  1. Whisk together 1 egg, 1/2 tsp. salt and 1 Tablespoon water
  2. Brush the wash over the raw dough bagels
  3. Sprinkle on desired toppings
  4. Bake as instructed

2 Ingredients bagels are simple to make, delicious and require NO yeast or special ingredients. Make them chewy with bread flour or soft with all purpose flour. Instructions to create your own self rising flours out of each included and toppings ideas. All ready in an hour with NO boiling.

Ingredients

  • 2 Cups self rising flour (see notes to make it)
  • 1-2 Cups Greek Yogurt ( add gradually until the mixture comes together)
  • Toppings as preferred

Instructions

  1. Preheat to 375 Degrees F.
  2. Put the self rising flour in a medium bowl
  3. Add half the Greek Yogurt.
  4. Stir together and add the remaining yogurt as needed to make a dough that stays together. (different flours will affect this) You want it to hold together well. No kneading required.2 ingredient bagel dough ball
  5. Remove dough from bowl.
  6. Roll the dough out into a rectangle (if dough is too sticky, add more flour)
  7. Cut into equal sized pieces. (use a digital scale to be exact)
  8. Form each dough piece into a balldough cut to make bagels
  9. Now push your finger through the middle of the dough ball and pull it gently to create a hole in the center. (remember it will close some during baking so make the hole large enough)raw 2 ingredient bagels
  10. If Using Toppings Now is the time to make your egg wash (or use water) brush it on the raw bagels and sprinkle on your favorite sesame seed topping on bagelstoppings. (see note section for more on Toppings and egg wash)
  11. Bake 20 minutes. ]

Notes

The Flour Options:


To make your own self rising flour for this recipe:

  1. Place 2 cups all purpose flour into a sifter with one Tablespoon of baking powder and 1/2 tsp. salt.
  2. Sift it together into a medium bowl.

NOTE on Bread Flour:
To Use Bread Flour for this recipe just follow the above instructions for self rising flour.

Bread flour will give you a chewier bagel and stiffer dough. I suggest you let the dough rest for 30 minutes before forming the bagels to allow the proteins in the dough to relax.


For WW 2 Ingredient Bagels tip:

We have used several types of topping with great success: Here are our favorites.
