Why Whip Brie?

Once you whip brie you can enjoy it in so many ways. Whipping brie (usually with some or all of the rind removed) creates a creamy spreadable brie with a lighter and softer consistency since the whipping process breaks down the cheese and incorporates air into it. The resulting product is a creamy, light cheese with so many more uses than serving it only as a block.

Both whipped and regular brie have their own merits and can be enjoyed in different ways. However, Whipping brie adds a whole new dimension to what you can do with it.

Whipped Brie With Wine
Brie counter balances the strong tannins in Cabernet Sauvignon

Brie cheese pairs well with a variety of wines. Here are some popular wine options that complement the flavors and textures of brie:

  1. Champagne/Sparkling Wine: The effervescence and acidity of Champagne or sparkling wine provide a refreshing contrast to the creamy richness of brie. The bubbles cleanse the palate, enhancing the overall experience.
  2. White Wines: Many white wines work harmoniously with brie. Some popular choices include:
    • Chardonnay: A buttery and oaked Chardonnay can complement the creamy and slightly nutty flavors of brie.
    • Sauvignon Blanc: The crisp acidity of Sauvignon Blanc pairs well with the creaminess of brie, providing a refreshing contrast.
    • Riesling: Off-dry or slightly sweet Riesling can balance the richness of brie, offering a pleasant balance of flavors.
  3. Red Wines: Opt for lighter-bodied and fruit-forward red wines that won’t overpower the delicate flavors of brie. Some options include:
    • Pinot Noir: The fruity and earthy characteristics of Pinot Noir can complement the creamy and mild flavors of brie.
    • Beaujolais: This light-bodied and fruity red wine pairs well with the creaminess of brie, offering a vibrant and lively match.
    • The key is to consider the specific characteristics of the wine and the flavor profile of the brie. Heavier red wines, such as Cabernet Sauvignon, Barolo, or Shiraz, tend to have intense tannins, rich fruit flavors, and higher alcohol content. When paired with brie, the richness of the cheese and the creaminess can provide a counterbalance to the wine’s robustness.
  4. Sweet/Dessert Wines: Sweet or dessert wines can create a delightful contrast with the richness of brie. Consider:
    • Sauternes: This luscious and honeyed dessert wine from Bordeaux can beautifully complement the creamy, slightly salty brie.
    • Late Harvest Wines: Late harvest Riesling or Gewürztraminer, with their natural sweetness, can create a pleasant contrast with the savory notes of brie.

It’s always fun to experiment and discover your own favorite wine and brie pairings.

Remove the Rind or Leave It on?

The rind of brie cheese is often removed before whipping. The rind can leave lumps in the whipped cheese and adds a stronger flavor than some people enjoy. The result of removing the rind is a whipped cheese with a smoother, more consistent flavor and texture.

If the rind lumps and flavor bits bother you, take the rind off all the way before whipping. We most often remove at least some of the rind from brie cheese before whipping it for a smoother result.

Most cooks are going to find taking off the rind of brie completely is difficult to do and not really necessary. To make removal easier, use a serrated knife, cheese knife or cheese slicer to get off as much as you can without wasting the good brie.

The decision to remove the rind and how much of it to remove, in the end, is a matter of personal preference. If you enjoy the flavor and texture of the rind and don’t mind its presence in the whipped brie, you can choose to leave it all on. If you use a food processor or good blender, you can get most of the rind mixed in smoothly.

We found taking the roughest part off and leaving the rest worked well. Whatever you choose to do about the rind, it’s a good idea to wash the rind so its clean before you whip the cheese.

Is Brie Healthy?

Brie cheese, like most cheeses, contains several beneficial nutrients (here’s an article by Healthine that goes deeper into this). Consume Brie in moderation due to its high fat and calorie content. Brie is filling and does offer a satisfying feeling of satiety. That’s what makes it an ideal candidate for appetizers where it is served as a part of a larger spread where it can be appreciated and savored. 🙂

Here are some nutritional aspects of brie cheese. Whipping it makes no material difference to the nutritional value of brie:

  1. Protein and Calcium: Brie cheese is a good source of both protein and calcium.
  2. Vitamins and Minerals: Brie cheese contains various vitamins and minerals, including vitamin B12, vitamin A, riboflavin, and phosphorus.
  3. Fat and Calories: Brie cheese is relatively high in fat and calories compared to some other cheeses. It is a rich source of saturated fats.
  4. Sodium: Brie cheese, like many cheeses, contains sodium. Excessive sodium intake can contribute to high blood pressure, so it’s important to consume brie and other cheese varieties in moderation, especially if you have existing health conditions.

Storing Whipped Brie:

Whipping brie shortens its shelf life. After brie is whipped, the rind is removed or whipped in so it cannot protect the cheese. In a nutshell, whipping brie increases surface area available to spoilage, there is no longer a protective barrier, and the cheese can dry out faster. This impacts shelf life compared to whole wheel of brie or even wedges with the rind on.

Whipped brie is best enjoyed relatively soon after preparation to ensure optimal flavor and texture. While it can be stored in the refrigerator for a few days, don’t expect it stay fresh, spreadable and moist longer than that. For the best taste and quality, make it and serve within two days.

Store brie, after its whipped, in a tightly sealed container or cover it with plastic wrap or a lid to minimize moisture loss and protect it from absorbing unwanted odors from the refrigerator.

Pay attention to any signs of spoilage, such as mold growth, off-putting odor, or changes in texture. If you notice any of these signs, discard the brie.

Whipped Brie

Whipped Brie Cheese Recipe:

How you whip brie, the process, time and add ins you use all determine the results you get. Basically, when you whip brie the process incorporates air into the cheese. This breaks down the cheese making it easier to spread and enhances its creamy consistency.

How much you whip, which tools you use and wether or not you remove the rind before whipping all impact the results. As do the extra ingredients you might add for fun, flavor or enhanced texture.

When choosing your whipping tool, consider the quantity of brie you’re working with, your desired texture, and the level of convenience and efficiency you prefer. If you don’t have a food processor or blender, Electric mixers, whether hand mixers or stand mixers, generally offer good control and efficiency in achieving a smooth and fluffy whipped brie. But they will take a bit longer. if you don’t mind a slightly less refined texture or prefer a more hands-on approach, manual tools like a potato masher or hand whisk can be used in a pinch.

Whatever tool you use, Whip the brie until it becomes smooth and fluffy. Make sure that any remaining rind is well incorporated.

The time you whip brie can range from a few minutes to several minutes. This depends on the power and speed of your food processor, blender, or other chosen tool. It’s best to start with shorter intervals and gradually increase the duration as needed. Throughout the process, you may need to pause and scrape down the sides of the bowl to ensure all the cheese is evenly whipped.

As you whip the brie, keep a close eye on the texture and stop when it reaches a creamy, spreadable consistency that you prefer. It’s essential to strike a balance between achieving a light and fluffy texture while not overworking the cheese, as excessive whipping can result in the cheese breaking down too much and becoming runny.

Remember, the consistency of whipped brie is somewhat subjective. Feel free to adjust the whipping time based on your personal preference or needs for your recipe.

Finally, the add ins: You can add a bit of cream or olive or avocado oil to enhance the texture of your finished brie. You can also add seasonings and herbs to compliment your use for it. It’s all so creative.

Yield: 8-1 oz. servings

Whipped Brie Recipe

Prep Time: 10 minutes
Total Time: 10 minutes

Whipped brie is a delicious variation of the classic cheese. It involves taking brie cheese and whipping it to create a light and fluffy texture. Whipping the brie incorporates air into the cheese, making it easier to spread and enhancing its creamy consistency. It can be used in many ways. It makes a great spread or dip.

Ingredients

  • 8 ounces of brie cheese (make sure it's ripe and at room temperature)
  • *2 tablespoons of heavy cream, milk or olive oil (optional, for a creamier texture)
  • Salt and pepper to taste (optional. Use your favorite seasonings and herbs as preferred)

Instructions

    1. Removing the rind from the brie wheel is optional but recommended for a smoother texture. You don't have to remove it all. Just the roughest part. Use a cheese slicer, serrated knife or cheese paring knife.
    2. Cut the brie cheese into small inch pieces.
    3. Place the brie cheese pieces in a food processor or blender.
    4. OPTIONAL: If desired, add 2 tablespoons of heavy cream or milk or olive oil to the brie cheese. This will help achieve a creamier, looser consistency.
    5. Add a pinch of salt and pepper. (add seasonings you prefer to taste)
    6. Process the mixture until the brie cheese is smooth and whipped. This usually takes a few minutes, depending on the power of your food processor or blender. You may need to scrape down the sides of the bowl occasionally to ensure everything is well incorporated.( Do NOT mix too much or the brie will beak down to runniness.)
    7. Taste the whipped brie and adjust the seasoning to taste.
    8. Serve immediately at room temperature for a looser cheese that spreads easily.
    9. OR Transfer the whipped brie to a container and refrigerate for at least 30 minutes before serving. Chilling it will help it set and firm up slightly.
    10. Serving Suggestion: Upon serving top the whipped brie with jam (fig is amazing) and drizzle hot honey(or plain) over all.
    11. Serve it as a delicous spread on bread, crackers, or use it as a dip for vegetables. It can also be used as a creamy topping for grilled meats or sandwiches.

Notes

*we opted not to add in the cream. Use it if you want to loosen the brie and make it a dip or looser spreadable for pizza, crackers, ect. We found with our rigid party crackers whipping the cheese by itself gave a good result.
